about the company.Our client is one of the largest F&B groups in Hong Kong. Currently they are looking for a Head Chef (Food Production) to oversee all culinary production within their food manufacturing plant. about the team.Reporting to the General Manager, this position will be responsible for the operations of Food Production Department, including all culinary production, review and enhance the production processes, and develop authentic menu designs. This position is expected to lead the whole food production department, including all chefs and production operation staff. about the job.As a Head Chef (Food Production), you are responsible for - Oversee daily operations to maintain production capacity while ensuring food quality and safety consistently by leading the culinary chef team.- Develop and customize authentic menus for different clients to enhance dining experience within budget and cultural constraints. - Manage and oversee research and development (R&D) to provide innovative food products for catering customers.- Optimize production workflow and standard operation procedures by initiating methods such as Lean, automation or data-driven corrective actions.- Process improvement projects to enhance productivity and operation.- Reduce food waste in order to control budget and improve production capability. skills & experiences required.In order to succeed, you need- Very solid Western culinary experience with at least 5 years at Executive/ Head chef level and people management experience.- At least 15 year working experience within hotel/ catering/ food production industry.- Experience in mass food production is highly preferred.- Knowledge in ISO 14000, ISO 9001, GMP and HACCP.- Strong sense and ability to develop menus for clients with culturally diverse background- Native/ Excellent command in English.
